grain free granola

It's been a beautiful warm spring weekend in Vancouver and all I want to do is be outside!!  I had my first ride on the bike this morning and man, my lady bitts are not loving me.  I always forget that you need to build up your distance and how long you sit on this super narrow, barely cushy saddle…OUCH! A good ride means a good breakfast.  How about some homemade grain free granola :)


It's super easy to make and you can add your personal preference of dried fruit, nuts and seeds.  I used cashews, walnuts, a few brazil nuts, pumpkin seeds, sunflower seeds, chia seeds and raisins.  I put all the ingredients in a food processor to crush them up a bit. Pulse - don't mix.  I then laid the mixture on a baking dish and drizzled with a mixture of coconut oil, peanut butter and cinnamon.  Bake at 325 for 25 minutes or until the mixture starts to go golden brown.  Ovens will vary the time.  Let the granola cool and serve with some fresh berries, coconut milk or yogurt.  Store in an airtight container in the cupboard.

  • Pumpkin seeds - Great source of Magnesium which also helps to regulate blood pressure, Zinc which aids in eye and skin health, your sleep and mood, and hep with insulin regulation
  • Sunflower seeds - Help with inflammation, contain Vitamin E for your skin, Magnesium, Antioxidants
